Savory Herb-Roasted Chicken with Garlic Mashed Potatoes
Ingredients
For the Herb-Roasted Chicken:
- 1 whole chicken (about 4 pounds)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, quartered
For the Garlic Mashed Potatoes:
- 2 pounds russet potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
Herb-Roasted Chicken:
1. Preheat and Prepare: Preheat your oven to 425°F. PT10M
