Savory Italian Sausage Tortellini Soup
Ingredients

- 1 pound Italian sausage, casing removed

- 18 ounces three cheese tortellini
- 4 cups fresh spinach, roughly chopped
- 1 cup heavy cream
- 1/4 cup fresh basil, chopped
Instructions
1. Heat the Olive Oil:
In a large pot or Dutch oven, heat the olive oil over medium heat until shimmering.
2. Cook the Sausage:
Add the Italian sausage to the pot, breaking it apart with a spoon. Sauté until browned and fully cooked, about 5-7 minutes. Remove excess fat if necessary.
3. Sauté Vegetables:
Stir in the sweet onion and carrots. Cook until the onion turns translucent, about 4-5 minutes.
4. Add Garlic and Spices:
Add the minced garlic, Italian seasoning, and fennel seeds. Cook for an additional 1 minute until fragrant.
5. Incorporate Flour:
Sprinkle the all-purpose flour over the sausage and vegetables. Stir continuously for 1-2 minutes to cook out the raw flour taste.
6. Prepare the Broth:
Gradually pour in the chicken stock, stirring constantly to prevent lumps. Add the Parmesan rind for added flavor.
7. Season the Soup:
Add the kosher salt and black pepper. Bring the soup to a gentle boil, then reduce the heat and let it simmer for 15 minutes, allowing the flavors to meld.
8. Cook the Tortellini:
Add the tortellini to the simmering soup. Cook according to the package directions, usually about 8-10 minutes, until tender.
9. Add Spinach and Cream:
Stir in the fresh spinach and cook until wilted, about 2 minutes. Lower the heat, then slowly add the heavy cream, stirring until fully incorporated.
10. Finish with Basil:
Remove the Parmesan rind and discard. Add the fresh basil just before serving for a burst of flavor.
