Savory Japanese Beef Curry with Tender Vegetables



Ingredients



- 2 1/2 pounds beef chuck roast, cut into 2-inch cubes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 4 cups beef broth
- 2 large Russet potatoes, peeled and cut into 1-inch cubes
- 3 large carrots, peeled and sliced
- 2 cups frozen pearl onions
- 1 package S&B Golden Curry Sauce Mix (Medium Hot)
- 2 cups white rice

Instructions



1. Prepare the Beef:
- Season the beef chuck roast cubes with salt and black pepper. Ensure each piece is evenly coated.

2. Sear the Beef:
- In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat.
- Add the seasoned beef cubes in batches, searing each side until browned (approximately 4-5 minutes per batch).
- Transfer the seared beef to a plate and set aside.

3. Build the Base:
- In the same pot, add the seared beef back.
- Pour in the beef broth, scraping the bottom to release any browned bits.
- Bring to a simmer.

4. Add Vegetables:
- Stir in the potatoes, carrots, and frozen pearl onions into the simmering beef broth.
- Cover and simmer over low-medium heat for about 45 minutes, or until the beef is tender and the vegetables are cooked through.

5. Prepare the Curry Sauce:
- Break the S&B Golden Curry Sauce Mix into pieces.
- Gradually stir into the beef and vegetable mixture until fully dissolved.

6. Thicken the Curry:
- Simmer uncovered for an additional 10-15 minutes, stirring occasionally, until the curry sauce thickens to your desired consistency.

7. Cook the Rice:
- While the curry is simmering, rinse the white rice under cold water until the water runs clear.
- Cook the rice according to package instructions. Set aside and keep warm.

8. Serve:
- Serve the hot beef curry over a bed of cooked white rice. Enjoy the harmony of tender beef, flavorful curry, and perfectly cooked vegetables.
