Savory Korean-Inspired Noodle Bowl with Gochujang and Miso



Ingredients



- 8 oz dried Asian noodles
- 2 tbsp gochujang
- 1 tbsp miso paste
- 1/2 cup frozen corn
- 1/2 cup frozen edamame
- 1/2 cup peas
- 2 cups baby spinach
- 2 large eggs
- 1/2 tsp salt
- 1 cup kimchi, chopped
- 2 spring onions, finely sliced
- 1 tbsp sesame seeds
- 1 sheet nori, cut into thin strips
- 1 tbsp peanut butter
- 1/2 block tofu, cubed
- 1 tbsp Better Than Bouillon Chicken
- 4 cups water (or enough to make the broth)
- 2 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 cup bean sprouts

Instructions



1. Prepare the Broth:
- In a medium pot, bring 4 cups of water to a simmer.
- Add 1 tbsp of Better Than Bouillon Chicken, 2 tbsp of gochujang, 1 tbsp of miso paste, and 1 tbsp of peanut butter, stirring until fully dissolved.
- Allow the broth to simmer gently for 5 minutes to meld the flavors.

2. Cook the Noodles:
- In a large pot, boil water and cook 8 oz of dried Asian noodles according to package instructions.
- Drain and set aside.

3. Prepare the Vegetables and Tofu:
- In a separate pan, heat 1 tbsp of sesame oil over medium heat.
- Add 1/2 block of tofu, cubed, and cook until golden brown on all sides, about 6 minutes.
- Add 1/2 cup each of frozen corn, peas, and edamame. Stir-fry until warmed through, about 4 minutes.
- Add 2 cups of baby spinach and cook until wilted, about 1 minute.

4. Assemble the Noodle Bowl:
- Divide the cooked noodles among four bowls.
- Ladle the hot broth over the noodles.
- Evenly distribute the tofu and vegetable mixture over each bowl of noodles.
- Top each bowl with 1/4 cup of chopped kimchi and 1 cup of bean sprouts.

5. Cook the Eggs:
- In a small pot, bring water to a gentle boil, add a pinch of salt, and carefully add 2 large eggs.
- Cook for 7 minutes for soft-boiled eggs. Remove eggs, run under cold water, peel, and cut in half.
- Place half an egg on top of each noodle bowl.

6. Garnish:
- Sprinkle each bowl with finely sliced spring onions, 1 tbsp sesame seeds, and nori strips.
- Drizzle with 2 tbsp of hoisin sauce.
