Savory Lemon Garlic Roast Chicken
Ingredients
- 1 whole chicken (about 4 pounds)
- 6 cloves of garlic, minced
- 1/4 cup olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 lemon, sliced
Instructions
1. Preparation:
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels. This helps the seasoning adhere better and ensures a crispier skin.
2. Seasoning:
- In a small bowl, mix the minced garlic, olive oil, salt, black pepper, and paprika until well combined.
- Place the chicken on a large baking tray or roasting pan.
- Carefully lift the skin of the chicken breasts and thighs, using your fingers. Be gentle to avoid tearing the skin.
- Spread half of the garlic olive oil mixture under the skin onto the flesh of the chicken. This will infuse flavor directly into the meat.
- Spread the remaining mixture over the exterior of the chicken.
- Arrange the lemon slices both inside the cavity and on top of the chicken.
3. Roasting:
- Place the chicken in the preheated oven.
- Roast for approximately 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear when the thigh is pierced.
4. Resting:
- Once cooked, remove the chicken from the oven and let it rest for about 10 minutes. Resting allows the juices to redistribute, ensuring moist and tender meat.
5. Serving:
- Carve the chicken and serve with the roasted lemon slices for an extra burst of flavor.
