Savory Lemon Herb Chicken with Garlic Butter Asparagus



Ingredients



For the Lemon Herb Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 lemon (zest and juice)
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme

For the Garlic Butter Asparagus:
- 1 pound asparagus, trimmed
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice

Instructions



1. Prepare the Chicken:
- Pat the chicken breasts dry using paper towels. Season both sides with salt, black pepper, and garlic powder.
- In a small bowl, combine the lemon zest, lemon juice, olive oil, oregano, and thyme. Mix well.
- Coat the chicken breasts with the lemon herb mixture. Ensure each breast is evenly covered. Allow marinating in the refrigerator for at least 30 minutes.

2. Cook the Chicken:
- Preheat a large skillet over medium-high heat. Add the marinated chicken breasts to the hot skillet.
- Cook for approximately 6-7 minutes per side, or until golden brown and no longer pink in the center. The internal temperature should reach 165°F.
- Remove the chicken from the skillet and let it rest for 5 minutes before serving.

3. Prepare the Garlic Butter Asparagus:
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the asparagus to the skillet, season with salt and black pepper, and toss to coat.
- Cook the asparagus for about 5-7 minutes until tender-crisp, stirring occasionally.
- Drizzle lemon juice over the cooked asparagus and toss once more.

4. Serve:
- Slice the rested chicken breasts and serve alongside the garlic butter asparagus. Drizzle any remaining juices from the skillet over the chicken for added flavor.
