Savory Lemon Herb Grilled Chicken



Ingredients


- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper

Instructions


1. Prepare the Marinade:
In a large mixing bowl, combine olive oil, lemon juice, minced garlic, honey, fresh thyme, and rosemary. Stir well to create a homogeneous mixture.

2. Marinate the Chicken:
Place the chicken breasts in the bowl, coating them completely with the marinade. Cover the bowl with plastic wrap and refrigerate for at least PT30M (30 minutes), allowing the flavors to meld, but for best results, marinate for up to PT2H (2 hours).

3. Preheat the Grill:
Set your grill to medium-high heat, approximately 375°F to 400°F (190°C to 200°C). Ensure the grill grates are clean and lightly oiled to prevent sticking.

4. Grill the Chicken:
Remove the chicken from the marinade and allow any excess liquid to drip off. Place the chicken on the preheated grill. Cook for about PT6M (6 minutes) on one side, then flip and grill for an additional PT6M (6 minutes), or until the internal temperature reaches 165°F (74°C).

5. Rest and Serve:
Once cooked, remove the chicken from the grill and let it rest for PT5M (5 minutes). This allows the juices to redistribute, ensuring moist and tender meat. Serve the chicken with your choice of sides, such as a fresh garden salad or grilled vegetables.
