Savory Mediterranean Beef & Dolma Pita Wraps
Ingredients
- 1 lb ground beef
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 tsp ground cumin
- 1 cup diced tomatoes (canned or fresh)
- 4 dolmas (grape leaves stuffed with rice)
- 1 cup plain Greek yogurt
- 4 pita breads
- 1 cup cooked white rice
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
Instructions
1. Prepare the Ingredients:
- Rinse and chop the fresh dill, parsley, and cilantro. Set aside.
- Dice the tomatoes if using fresh.
2. Cook the Beef:
- In a large skillet over medium heat, add the ground beef. Cook, stirring frequently, until browned and fully cooked, about PT10M (10 minutes).
- Season with salt, freshly ground black pepper, and ground cumin. Stir well to combine.
3. Add the Tomatoes:
- Stir in the diced tomatoes. Allow the mixture to simmer for PT5M (5 minutes) until the tomatoes have softened and integrated with the beef.
4. Incorporate the Dolmas:
- Gently chop the dolmas into bite-sized pieces and add to the skillet. Stir to combine, allowing flavors to meld for an additional PT5M (5 minutes).
5. Prepare the Pita Wraps:
- Warm the pita bread on a separate pan or in the oven until soft and pliable.
6. Assemble the Wraps:
- Spread a generous spoonful of plain Greek yogurt onto each warm pita.
- Add a portion of the beef and dolma mixture.
- Top with cooked white rice and a sprinkle of chopped dill, parsley, and cilantro.
7. Serve:
- Roll or fold the pita wraps and serve immediately while warm.
