Savory Mushroom and Edamame Noodle Bowl



Ingredients



- 4 cups mushroom broth
- 8 ounces Cremini mushrooms, sliced
- 1 cup shelled edamame
- 2 cups baby spinach
- 8 ounces noodles (your choice of soba or udon)
- 3 scallions, thinly sliced
- 2 tablespoons sesame seeds

Instructions



1. Prepare the Mushrooms and Broth
- Place a large pot on the stove over medium heat.
- Add the 4 cups of mushroom broth to the pot and bring it to a gentle simmer.

2. Cook the Mushrooms
- Add the 8 ounces of sliced Cremini mushrooms to the simmering broth.
- Allow the mushrooms to cook for about PT5M (5 minutes), stirring occasionally until they are tender.

3. Incorporate the Edamame
- Stir in 1 cup of shelled edamame into the pot.
- Simmer the mixture for an additional PT3M (3 minutes) to heat the edamame through.

4. Add the Noodles
- Introduce the 8 ounces of noodles to the broth.
- Cook according to package instructions, usually around PT8-10M (8-10 minutes). Stir often to prevent sticking.

5. Finish with Spinach and Scallions
- Once the noodles are cooked, reduce the heat to low.
- Add 2 cups of baby spinach to the pot. Stir until the spinach wilts, about PT2M (2 minutes).
- Sprinkle in the sliced scallions.

6. Serve and Garnish
- Ladle the warm noodle bowl into individual serving dishes.
- Garnish generously with 2 tablespoons of sesame seeds for a nutty flavor and texture.
