Savory New York Strip Steak with Curried Vegetables



Ingredients



- 2 New York strip steaks (approximately 1 pound each)
- 1 large onion, diced
- 2 medium carrots, peeled and chopped
- 2 medium potatoes, peeled and cubed
- 3 cloves garlic, minced
- 4 ounces curry blocks
- 3 cups water
- 2 tablespoons soy sauce
- 3 tablespoons vegetable oil
- Salt to taste
- Pepper to taste

Instructions



1. Prepare the Ingredients:
- Season the New York strip steaks generously with salt and pepper on both sides.
- Dice the onion, chop the carrots and potatoes, and mince the garlic.

2. Sear the Steaks:
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
- Once the oil is shimmering, add the steaks to the skillet. Cook until golden brown on each side, approximately 3 minutes per side for medium-rare.
- Remove the steaks from the skillet and set them aside to rest.

3. Cook the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of vegetable oil.
- Add the diced onion, chopped carrots, and potatoes to the skillet. Sauté the vegetables over medium heat for about 5 minutes until they begin to soften.
- Add the minced garlic and continue to sauté for another 1 minute until fragrant.

4. Prepare the Curry Sauce:
- Break the curry blocks into smaller pieces and stir them into the skillet with the vegetables.
- Pour in the 3 cups of water, stirring to dissolve the curry blocks completely.
- Add the soy sauce and bring the mixture to a simmer. Cook for 10 minutes, letting the sauce thicken and the flavors meld together.

5. Combine and Serve:
- Slice the rested New York strip steaks against the grain into thin strips.
- Return the steak slices to the skillet, mixing them with the curried vegetables. Cook for an additional 2 minutes to warm through.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, dividing equally among four plates.
