Savory Oven-Baked Shrimp and Celery Salad with Dill Dressing
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 stalks celery, finely chopped
- 2 green onions, chopped
- 2 hard-boiled eggs, chopped
- 1 cucumber, sliced
- 1 tablespoon fresh dill, chopped
- 2 tablespoons lemon juice
- 1/2 cup mayonnaise
- 1 teaspoon Old Bay seasoning
- 1 tablespoon whole grain Dijon mustard
- Salt and pepper to taste
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Prepare the Shrimp
Place the peeled and deveined shrimp on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon lemon juice, sprinkle with Old Bay seasoning, and toss to coat evenly.
3. Bake the Shrimp
Bake in the preheated oven for about 10 to 12 minutes or until shrimp is opaque and cooked through. Remove from the oven and allow to cool.
4. Prepare the Dressing
In a medium mixing bowl, combine the mayonnaise, the remaining tablespoon of lemon juice, whole grain Dijon mustard, and dill. Stir until smooth and well mixed.
5. Combine the Ingredients
In a large salad bowl, combine the chopped celery, green onions, hard-boiled eggs, and cucumber. Toss gently to mix.
6. Add Dressing and Shrimp
Add the cooled shrimp to the salad bowl. Pour the prepared dressing over the ingredients and gently fold until everything is well coated.
7. Season and Serve
Season with salt and pepper to taste. Serve the salad chilled or at room temperature.
