Savory Oven-Roasted Round Steak with Mushroom-Onion Gravy
Ingredients
- 1 1/2 lbs round steak
- 8 oz mushrooms, sliced
- 2 medium onions, thinly sliced
- 4 tbsp butter
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup beef broth
- 1 tsp dried thyme
- 2 tbsp Worcestershire sauce
- 2 tbsp cornstarch
Instructions
1. Preparation: Preheat your oven to 350°F (175°C).
2. Sear the Steak:
- Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat.
- Season the round steak with 1/2 tsp salt and 1/4 tsp black pepper on both sides.
- Place the steak in the skillet and sear for about 3 to 4 minutes per side until browned.
- Remove the steak from the skillet and set aside.
3. Prepare the Vegetables:
- In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter.
- Add sliced onions and sauté for 5 minutes until translucent.
- Add mushrooms, remaining 1/2 tsp salt, and 1/4 tsp black pepper.
- Cook for an additional 5 minutes until mushrooms are golden brown.
4. Create the Gravy:
- Stir in the Worcestershire sauce, dried thyme, and beef broth.
- Bring the mixture to a simmer.
- In a small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry.
- Add the slurry to the skillet, stirring continuously until the sauce thickens, about 2 minutes.
5. Roasting the Steak:
- Return the steak to the skillet, nestling it into the onion-mushroom mixture.
- Transfer the skillet to the preheated oven.
- Roast for 25 minutes or until the steak is tender.
6. Finish and Serve:
- Carefully remove the skillet from the oven.
- Let the steak rest for 5 minutes before slicing.
- Serve slices of steak topped with the rich mushroom-onion gravy.
