Savory Pan-Fried Chicken with Grapes and Balsamic Glaze
Ingredients
- 4 whole chicken breasts
- 1 cup seedless grapes, halved
- 2 tablespoons honey
- 1 cup chicken stock
- 1/4 cup balsamic vinegar
- 1 tablespoon fresh rosemary, finely chopped (optional)
- 1 shallot, finely chopped (optional)
- 2 garlic cloves, minced (optional)
- 1 tablespoon sherry vinegar (optional)
- 1 tablespoon white wine vinegar (optional)
- 1/4 cup white wine (optional)
- 1/4 cup orange juice (optional)
- 1/4 cup apple juice (optional)
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions
1. Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides. Set aside.
2. Prep the Aromatics:
If using, finely chop the shallot and rosemary, and mince the garlic. Set aside.
3. Cook the Chicken:
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and keep warm.
4. Sauté Aromatics:
In the same skillet, add the shallot and garlic (if using) and sauté for about 1-2 minutes until fragrant.
5. Create the Glaze:
Lower the heat to medium and add balsamic vinegar, chicken stock, and honey to the skillet. Stir well to combine. Optional additions such as sherry vinegar, white wine vinegar, white wine, orange juice, or apple juice can be added at this stage to layer flavors. Let the mixture simmer for about 5 minutes until it thickens slightly.
6. Incorporate Grapes and Rosemary:
Add the halved grapes and rosemary (if using) to the reduced sauce. Cook for another 2 minutes until the grapes are slightly softened.
7. Finish the Dish:
Return the chicken breasts to the skillet, spoon the glaze and grape mixture over them, and simmer for an additional 2-3 minutes to meld the flavors.
8. Serve:
Plate the chicken breasts and generously top with the grape-balsamic glaze mixture. Serve immediately with preferred sides.
