Savory Pan-Fried Lentil & Mushroom Patties
Ingredients
- 1 cup green lentils, rinsed
- 2 cups water (for lentil cooking)
- 1 portobello mushroom cap, finely chopped
- 1 cup button mushrooms, finely chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon fennel seed, crushed
- 2 teaspoons Italian seasoning
- 1 tablespoon mushroom powder
- 2 tablespoons ground flaxseed
- 1/3 cup water (for flaxseed egg)
- 1/4 cup nutritional yeast
- 1 cup panko breadcrumbs
- 2 tablespoons olive oil (plus extra for frying)
- 1 teaspoon fine sea salt
- 1/2 teaspoon fresh ground black pepper
Instructions
1. Prepare the Lentils:
- In a medium saucepan, combine the green lentils and 2 cups water.
- Bring to a boil over medium-high heat, then reduce the heat to low. Simmer until lentils are tender, about 20-25 minutes. Drain and set aside.
2. Make the Flaxseed Egg:
- In a small bowl, combine 2 tablespoons ground flaxseed with 1/3 cup water. Stir well and let sit for at least 5 minutes, until it becomes gelatinous.
3. Prepare the Vegetables:
- In a large skillet, heat 2 tablespoons olive oil over medium heat.
- Add the diced onion and cook for 3-4 minutes until translucent.
- Add the garlic and fennel seed, sautéing for another minute until fragrant.
- Stir in the chopped portobello mushroom cap and button mushrooms. Cook until the mushrooms are soft and any liquid has evaporated, about 5-7 minutes.
4. Combine Ingredients:
- In a large mixing bowl, combine cooked lentils, sautéed vegetables, Italian seasoning, mushroom powder, nutritional yeast, panko breadcrumbs, and the flaxseed egg. Mix thoroughly.
- Season with fine sea salt and fresh ground black pepper.
5. Form the Patties:
- Divide the mixture into 8 equal portions and form each into a patty about 1/2 inch thick.
6. Pan-Fry the Patties:
- In the same large skillet, add enough olive oil to coat the bottom of the pan and heat over medium-high heat.
- Add patties, cooking in batches to avoid overcrowding. Fry each patty for 3-4 minutes on each side, until golden brown and crispy.
- Remove from skillet and drain on paper towels.
