Savory Pan-Fried Pork Chops with Sage and Stone Fruit
Ingredients
- 4 boneless pork chops (approximately 1-inch thick)
- 1 tablespoon salt
- 2 ripe peaches (or substitute with any available stone fruit), pitted and sliced
- 8 fresh sage leaves
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
Instructions
1. Prepare the Pork Chops:
- Remove pork chops from the refrigerator and let them sit at room temperature for about 10 minutes.
- Season both sides generously with salt. Set aside.
2. Prepare the Stone Fruit:
- Slice the peaches (or substitute stone fruit) into wedges. Set aside.
3. Infuse the Oil:
- In a large skillet, heat the olive oil over medium heat.
- Add minced garlic and sage leaves to the skillet. Sauté for about 2 minutes until fragrant and the sage leaves are slightly crispy.
4. Cook the Pork Chops:
- Increase the heat to medium-high and add the pork chops to the infused oil in the skillet.
- Cook for 3-4 minutes on each side, turning once, until they are golden brown and cooked to an internal temperature of 145°F.
- Remove pork chops from the skillet and place on a plate. Cover loosely with aluminum foil to keep warm.
5. Sauté the Stone Fruit:
- In the same skillet, add the sliced stone fruit.
- Cook for about 2-3 minutes, stirring occasionally until the fruit softens and begins to caramelize.
6. Assemble and Serve:
- Arrange the pork chops on a serving platter.
- Top with sautéed stone fruit and crispy sage leaves.
- Drizzle any pan juices over the top and serve immediately.
