Savory Pork Tenderloin and Vegetable Medley with Zesty Dijon Ranch Sauce
Ingredients
- Main Components:
- 1 lb pork tenderloin
- 8 oz penne pasta
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1/2 red onion, thinly sliced
- 2 cloves garlic, minced
- Sauce:
- 1/4 cup Dijon mustard
- 1 packet ranch dip mix
- 1/2 cup cottage cheese
- Garnish:
- 1/4 cup fresh parsley, minced
- 1/2 cup mozzarella cheese, shredded
- Additional:
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Pork Tenderloin:
- Trim any excess fat from the pork tenderloin and slice it into 1/2-inch medallions. Season with salt and pepper.
2. Cook the Pasta:
- Boil a large pot of salted water and cook the penne pasta according to package instructions until al dente, approximately PT10M (10 minutes).
- Drain and set aside.
3. Saute Vegetables:
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the broccoli florets, red bell pepper, zucchini, and red onion. Saute for PT5M (5 minutes) until tender-crisp.
- Add the minced garlic and stir for an additional PT1M (1 minute) until fragrant.
- Remove vegetables from the skillet and set aside.
4. Saute Pork:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the pork medallions in a single layer and cook for PT4M (4 minutes) on each side until cooked through and lightly browned.
5. Prepare the Sauce:
- In a blender, combine Dijon mustard, ranch dip mix, and cottage cheese. Blend until smooth and creamy.
6. Combine and Serve:
- Return the sauteed vegetables to the skillet with the cooked pork.
- Pour the Dijon ranch sauce over the pork and vegetables and stir to combine.
- Add the cooked pasta to the skillet and toss everything together until well combined and heated through, about PT2M (2 minutes).
- Garnish with mozzarella cheese and fresh parsley.
- Serve hot and enjoy.
