Savory Pumpkin and Chicken Pasta with Sage-Infused White Wine Sauce



Ingredients



- 8 ounces Pancetta, diced
- 4 Scallions, finely chopped
- 3 cloves Garlic, minced
- 2 tablespoons Fresh sage, chopped
- 1 cup Dry white wine
- 1 cup Pumpkin purée
- 12 ounces Pasta (your choice of type)
- 2 tablespoons Fresh parsley, chopped
- 1/4 cup Pumpkin seeds, toasted
- 1/2 cup Pecorino Romano cheese, grated
- 1/2 cup Parmigiano Reggiano cheese, grated
- 1 Rotisserie chicken, shredded (approximately 2 cups)
- 1 cup Broccoli, florets only
- 2 cups Spinach leaves
- Salt and pepper to taste
- 2 tablespoons Olive oil

Instructions



1. Prepare Pasta and Broccoli:
- Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- In the last 2 minutes of cooking, add the broccoli florets to the pot.
- Drain both pasta and broccoli, reserving 1/2 cup of pasta water, and set aside.

2. Sauté Pancetta and Vegetables:
- In a large skillet, heat olive oil over medium heat. Add pancetta and cook for about 5 minutes, until crispy.
- Add the chopped scallions and minced garlic to the skillet. Sauté for about 2 minutes, or until fragrant.

3. Create the Sage-Infused Sauce:
- Stir in the chopped fresh sage and cook for another minute.
- Pour in the dry white wine and bring to a simmer. Let it reduce for about 3 minutes.
- Add the pumpkin purée and stir well to combine. Allow the flavors to meld for another 3 minutes.

4. Combine and Simmer:
- Reduce the heat to low and add the shredded rotisserie chicken to the sauce, mixing to coat.
- Gently incorporate the cooked pasta, broccoli, and spinach leaves, stirring until the spinach wilts.
- If the sauce is too thick, use the reserved pasta water to thin it out, a tablespoon at a time.

5. Finish with Cheese and Garnish:
- Off the heat, mix in half of the grated Pecorino Romano and Parmigiano Reggiano cheese, stirring until melted and smooth.
- Season with salt and pepper to your taste.
- Serve the pasta in bowls, garnished with fresh parsley and toasted pumpkin seeds.
- Sprinkle the remaining cheese on top before serving.
