Ingredients
- 2 pounds pork loin
- 2 tablespoons avocado oil
- 6-8 fresh sage leaves
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated

- 1 tablespoon Dijon mustard

- 1 teaspoon Aleppo pepper
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Prepare the Marinade:
In a medium bowl, combine soy sauce, honey, brown sugar, Dijon mustard, rice wine vinegar, gochugaru, Aleppo pepper, and red pepper flakes. Mix well until the honey and sugar are fully dissolved.
2. Marinate the Pork:
Place the pork loin in a large resealable bag. Pour the marinade over the pork, ensuring it is evenly coated. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
3. Preheat the Oven:
Preheat your oven to 375°F (190°C).
4. Sear the Pork Loin:
Heat avocado oil in a large oven-safe skillet over medium-high heat. Remove the pork from the marinade (reserving the marinade) and pat it dry with paper towels. Season with salt and black pepper. Sear the pork loin on all sides until golden brown, about 3-5 minutes per side.
5. Prepare for Roasting:
Reduce the heat to medium. Add minced garlic, grated ginger, and fresh sage leaves to the skillet. Cook for 1 minute until fragrant.
6. Roast the Pork Loin:
Pour the reserved marinade over the pork. Transfer the skillet to the preheated oven. Roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C), basting occasionally with the pan juices.
7. Rest and Serve:
Remove the pork from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute, ensuring a moist roast. Slice the pork loin into medallions and drizzle with the sauce from the skillet before serving.
