Savory Sardine Medley over Tomato Sofrito Rice



Ingredients



Sardines:
- 1 can (4.25 oz) sardines in tomato sauce
- 1 can (4.25 oz) sardines in olive oil
- 1 can (4.25 oz) sardines in water
- 1 can (4.25 oz) sardines in mustard sauce
- 1 can (4.25 oz) sardines in Louisiana hot sauce
- 1 can (4.25 oz) sardines in lemon pepper

Rice and Sauce:
- 2 cups white rice
- 2 cups tomato broth
- 2 tablespoons sofrito
- 1 teaspoon adobo seasoning
- 1 packet sazón seasoning

Instructions



1. Rinse and Prepare Rice:
- Rinse 2 cups of white rice under cold water to remove excess starch until the water runs clear.

2. Cook the Rice:
- In a medium-sized pot, combine the rinsed rice with 2 cups of tomato broth, 2 tablespoons of sofrito, 1 teaspoon of adobo seasoning, and 1 packet of sazón seasoning.
- Stir the mixture well to ensure all ingredients are evenly distributed.
- Bring the pot to a boil over high heat, then reduce the heat to low. Cover and let simmer for about 18-20 minutes, or until the rice is tender and has absorbed all the liquid.

3. Prepare the Sardine Medley:
- While the rice is cooking, open all six cans of sardines and gently drain any excess liquid.
- In a large saucepan over medium heat, combine the sardines in tomato sauce, olive oil, and water.
- Stir in the sardines in mustard sauce, Louisiana hot sauce, and lemon pepper, breaking them into slightly smaller pieces while maintaining some texture.

4. Simmer the Sardines:
- Allow the sardines to simmer for about 5 minutes, stirring occasionally to integrate all flavors without mashing the fish completely. This will create a flavorful medley with distinct layers of flavor.

5. Combine and Serve:
- Once the rice has cooked, fluff it gently with a fork and place it as a base on a serving platter.
- Spoon the savory sardine medley evenly over the tomato sofrito rice.
- Serve immediately, garnished with fresh herbs if desired, and enjoy your hearty dinner dish.
