Savory Sausage & Cornbread Casserole with Buttermilk Baked Vegetables



Ingredients



Main Components:
- 1 lb sausage, crumbled
- 2 cups cornbread, crumbled
- 1 1/2 cups rice, cooked
- 2 cups macaroni, cooked
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup buttermilk

Vegetables:
- 2 cups potatoes, diced
- 1 cup sweet potatoes, diced
- 1 cup broccoli florets
- 1 cup fresh green beans, trimmed
- 1 cup corn kernels
- 1/2 cup peas

Toppings:
- 1/4 cup molasses
- 1/4 cup pecans, chopped
- 1/4 cup pistachios, chopped
- 1/4 cup dried cranberries

Optional Garnishes:
- 1/2 cup fresh strawberries, sliced
- 1/2 cup pineapple chunks

Other:
- Salt and pepper to taste
- Cooking spray

Instructions



1. Prep the Oven:
- Preheat your oven to 375°F (190°C).

2. Prepare the Sausage:
- In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked, approximately 8–10 minutes. Drain any excess fat.

3. Cook the Vegetables:
- In a large bowl, combine the diced potatoes, sweet potatoes, broccoli, green beans, corn, and peas. Add 1/4 cup of buttermilk and toss to coat. Season with salt and pepper.

4. Combine Ingredients:
- In a large mixing bowl, combine the cooked sausage, crumbled cornbread, cooked rice, cooked macaroni, and shredded cheese. Mix well.

5. Assemble the Casserole:
- Lightly spray a 9x13-inch baking dish with cooking spray. Spread half of the sausage and cornbread mixture on the bottom. Layer with the buttermilk-coated vegetable mixture. Top with the remaining sausage and cornbread mixture.

6. Add Toppings:
- Drizzle the molasses over the top of the casserole. Sprinkle with chopped pecans, pistachios, and cranberries.

7. Bake:
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake an additional 10–15 minutes, or until the top is golden brown and the vegetables are tender.

8. Garnish and Serve:
- Remove from oven and let rest for 5 minutes. Garnish with sliced strawberries and pineapple chunks just before serving.
