Savory Scallion Soy Sauce Pasta
Ingredients
- 8 ounces dried pasta (e.g., spaghetti, linguine, pappardelle)
- 1/4 cup vegetable oil
- 6 scallions, finely chopped
- 1/4 cup soy sauce
- 1 tablespoon sugar
Instructions
1. Prepare the Pasta:
- Bring a large pot of water to a rolling boil.
- Add a pinch of salt and the 8 ounces of dried pasta.
- Cook according to the package instructions until al dente, usually around 8 to 10 minutes.
- Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set it aside.
2. Create the Scallion Infusion:
- In a large, non-stick frying pan, heat 1/4 cup vegetable oil over medium heat.
- Add the finely chopped scallions and sauté, stirring occasionally, for about 3 to 5 minutes until they become fragrant and slightly golden.
3. Combine Soy Sauce and Sugar:
- Lower the heat to medium-low.
- Pour in 1/4 cup soy sauce and add 1 tablespoon of sugar, stirring to dissolve the sugar completely.
4. Toss the Pasta:
- Add the cooked pasta directly into the sauce in the pan.
- Gently toss the pasta to coat it evenly with the scallion-soy sauce mixture.
- If the pasta seems dry, add some of the reserved pasta water, a little at a time, until the desired consistency is achieved.
5. Final Seasoning and Serve:
- Continue cooking for another 2 minutes, allowing the pasta to soak up the flavors.
- Remove from heat and serve immediately for optimal flavor and texture.
