For the Mashed Potato Topping:
- 2 pounds potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 1 cup milk
- 1 cup grated sharp cheddar cheese
- Fine sea salt, to taste

Instructions



1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).

2. Prepare the Meat Filling:
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and ground lamb. Cook, breaking it apart with a spoon, until browned, about 7 minutes.
- Add diced onions and carrots to the skillet. Sauté for 5 minutes until the onions are translucent.
- Sprinkle the flour over the meat mixture and stir well for 1 minute.
- Add garlic powder, dried thyme, and tomato paste, stirring to coat the mixture evenly.
- Pour in beef stock, chicken stock, and veggie broth, stirring to combine.
- Bring the mixture to a gentle simmer, reduce heat to low, and cook for 15 minutes until the sauce thickens.
- Stir in Worcestershire sauce and frozen peas. Season with fine sea salt to taste.

3. Prepare the Mashed Potato Topping:
- Meanwhile, in a large pot, cook the cubed potatoes in salted boiling water until tender, about 15 minutes.
- Drain and return the potatoes to the pot. Add butter and milk. Mash until smooth and creamy.
- Stir in grated cheddar cheese and season with fine sea salt to taste.

4. Assemble the Shepherd's Pie:
- Spoon the meat filling into a 9x13-inch baking dish, spreading it evenly.
- Gently top with the mashed potatoes, smoothing them with a spatula.
