Savory Steak Stroganoff with Cremini Mushrooms
Ingredients
- 1 pound boneless sirloin or strip or rib-eye steak, sliced into thin strips
- 1 teaspoon Kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons sunflower oil or light olive oil
- 8 ounces cremini mushrooms, sliced
- 1 medium yellow onion, finely chopped
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 cup dry white wine
- 1/2 cup water
- 1/2 cup sour cream
- 8 ounces egg noodles or 4 cups mashed potatoes
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Steak
Season the sliced steak with the Kosher salt and freshly ground black pepper. Set aside for 5 minutes.
2. Cook the Steak
Heat 1 tablespoon of sunflower oil over medium-high heat in a large sauté pan. Add the steak strips in batches to ensure proper browning, cooking each side for about 2 minutes until browned. Remove steak from the pan and set aside.
3. Sauté the Vegetables
In the same pan, add the remaining tablespoon of oil. Add the cremini mushrooms and onion, sautéing over medium heat until the mushrooms are soft and the onions are translucent, about 5 minutes.
4. Add Seasonings
Stir in the tomato paste, paprika, and cayenne pepper, allowing the mixture to cook for 2 minutes.
5. Deglaze the Pan
Pour in the dry white wine, scraping up any browned bits from the pan's bottom. Let the wine reduce by half, approximately 5 minutes.
6. Make the Sauce
Add water to the pan, stir to combine, then lower the heat and mix in the sour cream. Cook the sauce gently without reaching a boil.
7. Combine the Ingredients
Return the steak to the pan with the sauce, allowing it to simmer for 5 minutes.
8. Prepare Egg Noodles or Mashed Potatoes
Cook egg noodles according to package instructions, or prepare mashed potatoes as desired.
9. Assemble the Dish
Serve the steak stroganoff over your choice of egg noodles or mashed potatoes. Garnish with freshly chopped parsley before serving.
