Savory Stir-Fried Tofu with Vegetables & Maple Tamari Glaze
Ingredients
- 1 block of firm tofu (14 oz)
- 2 tablespoons avocado oil
- 3 cloves garlic, minced
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas)
- 2 tablespoons tamari sauce
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 2 tablespoons vegetable oil
Instructions
1. Prepare Tofu
- Drain the tofu and press it for 10 minutes to remove excess moisture.
- Cut the tofu into 1-inch cubes.
2. Make the Sauce
- In a small bowl, whisk together the tamari, maple syrup, and smoked paprika until well combined. Set aside.
3. Cook Tofu
- Heat 1 tablespoon of avocado oil in a non-stick skillet over medium heat.
- Add the tofu cubes, and pan-fry them until golden brown on each side, about 8 minutes in total.
- Remove the tofu from the pan and set aside.
4. Stir-Fry Vegetables
- In the same skillet, add the remaining 1 tablespoon of avocado oil.
- Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the mixed vegetables, stirring frequently, and cook until just tender, about 5 minutes.
5. Combine & Glaze
- Return the tofu to the skillet with the vegetables.
- Pour the maple tamari sauce over the tofu and vegetables, stirring well to coat everything evenly.
- Increase the heat to high and stir-fry for an additional 2 minutes, allowing the flavors to meld.
6. Serve
- Remove from heat and serve immediately, garnishing with additional smoked paprika if desired.
