Savory Stir-Fry Cabbage & Crunchy Dill Pickle Slaw



Ingredients



- 1 small cabbage, shredded
- 1 large onion, thinly sliced
- 2 medium carrots, julienned
- 1 red bell pepper, thinly sliced
- 1/4 cup sweet pickle juice
- 2 tablespoons white vinegar
- 1/4 cup dill pickles, finely chopped
- 2 tablespoons pickle relish
- 1/2 cup mayonnaise
- 1 tablespoon sugar
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt

Instructions



1. Prepare the Veggies
- Shred the cabbage and set it aside in a large bowl.
- Thinly slice the onion and red bell pepper.
- Julienne the carrots.

2. Make the Dressing
- In a separate small bowl, mix together the sweet pickle juice, white vinegar, dill pickles, pickle relish, mayonnaise, sugar, black pepper, and salt until well combined.

3. Stir Fry the Vegetables
- Heat a large skillet or wok over medium-high heat.
- Add the onion and red bell pepper and stir fry for about 3 minutes until they begin to soften.
- Add the carrots and cabbage and continue to stir fry for another 5 minutes, stirring frequently until the vegetables are tender but still crisp.

4. Combine and Dress
- Remove the skillet from heat and allow the vegetables to cool slightly.
- Pour the creamy dill pickle dressing over the stir-fried vegetables and toss to coat evenly.

5. Serve
- Transfer the dressed slaw to a serving platter or individual plates.
- Serve immediately for a warm slaw or refrigerate for 15 minutes for a chilled version.
