Savory Stove-Top Bacon Potato Salad



Ingredients


- 1/4 cup bacon fat
- 4 medium potatoes, peeled and diced
- 1 cup bacon bits
- 2 medium yellow onions, finely chopped
- 1 cup mayonnaise
- 1/2 teaspoon black pepper

Instructions



1. Prepare Potatoes:
- In a large pot, bring water to a boil over medium-high heat.
- Add the diced potatoes and cook until tender, approximately PT10M (10 minutes).
- Drain and set aside.

2. Cook Onions:
- In a large skillet, heat the bacon fat over medium heat.
- Add the finely chopped yellow onions.
- Sauté until onions are translucent and slightly browned, about PT5M (5 minutes).

3. Combine Ingredients:
- Add the cooked potatoes to the skillet with the onions.
- Stir gently to coat the potatoes with the bacon fat and onion mixture.

4. Add Flavor:
- Mix in the bacon bits and black pepper.
- Cook for an additional PT5M (5 minutes), allowing flavors to meld together.

5. Finish Salad:
- Remove from heat and let cool slightly, about PT10M (10 minutes).
- Add the mayonnaise to the potato mixture.
- Stir until everything is well combined.

6. Serve:
- Transfer to a serving bowl.
- Serve warm or at room temperature as a delightful dinner side dish.
