Savory Stove-Top Herb Turkey Gravy
Ingredients
- 1 cup turkey drippings
- 4 tablespoons unsalted butter
- 1 tablespoon dried herbs (such as rosemary, marjoram, and oregano)
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- 2 cups chicken stock
- 1/2 cup white wine
- Salt and pepper to taste
Instructions
1. Prepare Drippings and Butter Base
- In a medium saucepan over medium heat, melt the butter. This should take about 2 minutes.
- Once the butter is melted, add the turkey drippings. Stir continuously for another 2 minutes to combine.
2. Incorporate Dry Ingredients
- Sprinkle in dried herbs, sage, and thyme.
- Stir the mixture well to ensure the herbs are evenly distributed throughout the base. Cook for about 1 minute until fragrant.
3. Deglaze and Build Flavor
- Pour in the white wine. Stir constantly as the liquid begins to reduce slightly, about 3 minutes.
- Allow the mixture to bubble, evaporating some alcohol from the wine as it enhances the flavor.
4. Add Stock and Simmer
- Gradually add chicken stock while stirring to avoid lumps.
- Increase heat to medium-high, bringing the mixture to a gentle boil.
- Reduce to a simmer, cooking gently for about 10 minutes, stirring occasionally until the gravy thickens to your desired consistency.
5. Season and Serve
- Taste the gravy, and add salt and pepper as needed to enhance the overall flavor.
- Remove from heat and strain if desired for a smoother texture.
- Serve hot over roasted turkey or mashed potatoes.
