Savory Stove-Top Kielbasa and Sauerkraut Delight



Ingredients


- 6 slices bacon, diced
- 1 pound kielbasa, sliced
- 1 large onion, finely chopped
- 2 medium carrots, peeled and sliced
- 3 cloves garlic, minced
- 2 teaspoons sweet paprika
- 4 sprigs fresh thyme
- 2 cups chicken stock
- 3 cups sauerkraut, drained
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper

Instructions


1. Prepare Ingredients: Dice the bacon, slice the kielbasa, finely chop the onion, and peel and slice the carrots. Mince the garlic and drain the sauerkraut. Set aside.
2. Cook the Bacon: In a large pot over medium heat, cook the diced bacon until crispy, about 6-8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the rendered fat in the pot.
3. Sauté Vegetables: Add the chopped onion and sliced carrots to the pot with the bacon fat. Sauté while stirring occasionally until the onion is translucent and the carrots have softened, about 8-10 minutes.
4. Add Garlic and Spices: Add the minced garlic and 2 teaspoons of sweet paprika to the pot. Cook for an additional 1-2 minutes until fragrant, stirring continuously.
5. Cook Kielbasa: Add the sliced kielbasa to the pot and stir to combine. Cook until the kielbasa is browned on all sides, approximately 6-8 minutes.
6. Simmer with Sauerkraut: Stir in the drained sauerkraut along with the fresh thyme sprigs, mixing well with the other ingredients.
7. Add Stock and Season: Pour in 2 cups of chicken stock, then season with 1/2 teaspoon of fine sea salt and 1/4 teaspoon of freshly ground black pepper. Bring the mixture to a gentle boil.
8. Simmer: Reduce the heat to low and cover the pot. Allow the mixture to simmer for approximately 30 minutes, stirring occasionally, until the flavors are well-blended.
9. Finish and Serve: Remove the thyme sprigs, adjust seasoning if needed, and serve hot. Garnish with crispy bacon before serving for an added crunch.
