Savory Stove-Top Lemon Herb Chicken Skillet
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 cup chicken broth
- 1 tablespoon butter
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Chicken:
- Season the chicken breasts with salt and black pepper on both sides.
2. Sear the Chicken:
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts.
- Cook for about 6 minutes on each side until golden brown and just cooked through. Remove the chicken from the skillet and set aside.
3. Prepare the Sauce:
- In the same skillet, reduce the heat to medium.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Stir in the lemon juice and zest, oregano, thyme, paprika, and chicken broth, scraping up any browned bits from the bottom of the pan.
4. Simmer and Thicken:
- Bring the sauce to a simmer. Allow it to cook for about 5 minutes until slightly reduced.
- Stir in the butter and continue to cook until the sauce thickens slightly.
5. Return Chicken to Skillet:
- Add the chicken breasts back into the skillet, spooning the sauce over them.
- Cook for an additional 3 minutes to heat through and let the flavors meld.
6. Garnish and Serve:
- Transfer the chicken to a serving plate, pour over the lemon-herb sauce, and garnish with chopped parsley.
- Serve hot, paired with a side of steamed vegetables or rice, if desired.
