Savory Swedish Meatballs with Caper Sauce
Ingredients
Swedish Meatballs
- 1 lb ground pork
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/2 cup heavy cream
- 1 medium onion, finely chopped
- 1 large egg
- 2 anchovy fillets, finely chopped
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 bay leaf
Caper Sauce
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 cup heavy cream
- 2 tbsp capers
- 2 tbsp caper brine
- 1/4 cup chopped fresh parsley
Instructions
1. Prepare the Meatball Mixture:
In a large bowl, combine the ground pork, ground beef, breadcrumbs, and heavy cream. Mix gently until well combined. Allow the mixture to rest for 10 minutes to allow the breadcrumbs to absorb the cream.
2. Combine the Ingredients:
Add the finely chopped onion, egg, anchovy fillets, kosher salt, ground black pepper, and bay leaf to the meat mixture. Mix until all ingredients are uniformly combined, being careful not to overwork the meat.
3. Shape the Meatballs:
Form the mixture into 1-inch meatballs. You should have approximately 24-30 meatballs.
4. Cook the Meatballs:
Heat a large skillet over medium-high heat. Sear the meatballs in batches, turning occasionally until they are browned on all sides and cooked through, about 10 minutes per batch. Remove meatballs from the skillet and set aside.
5. Make the Caper Sauce:
In the same skillet, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and cook for 1-2 minutes to form a roux. Gradually whisk in the heavy cream, continuing to whisk until the sauce thickens, approximately 5 minutes.
6. Add Capers and Brine:
Stir in the capers and caper brine, then reduce the heat to low. Simmer the sauce for an additional 2 minutes.
7. Finish the Dish:
Return the meatballs to the skillet, spooning the sauce over them to coat evenly. Allow them to heat through for 3-4 minutes. Stir in chopped fresh parsley just before serving.
