Savory Tomato and Bacon Herb Stew
Ingredients
- 1 can (28 oz) canned tomatoes
- 4 cloves garlic, minced
- 1 large onion, finely chopped
- 1 cup fresh basil leaves, chopped
- 4 slices bacon, chopped
- 4 oz pancetta, diced
- 2 cups beef stock
- 2 cups chicken stock
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 leek (white and light green parts only), sliced
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare Ingredients:
Peel and dice the carrots, chop the celery, and slice the leeks. Finely chop the onion and mince the garlic. Rinse and chop the basil leaves.
2. Cook the Bacon and Pancetta:
In a large pot, heat olive oil over medium heat. Add chopped bacon and pancetta. Cook for about 8 minutes until crispy, stirring occasionally. Remove and set aside, leaving the fat in the pot.
3. Sauté Vegetables:
Add onions, carrots, celery, and leeks to the pot. Sauté for about 10 minutes until softened. Stir in the minced garlic and cook for another 2 minutes.
4. Create the Base:
Sprinkle flour over the sautéed vegetables and stir continuously for 2 minutes to form a roux. Gradually add beef stock and chicken stock, stirring to avoid lumps.
5. Add Tomatoes and Simmer:
Pour in the canned tomatoes, crushing them with the back of a spoon. Add the crispy bacon and pancetta back to the pot. Season with salt and pepper. Bring the stew to a boil.
6. Simmer:
Reduce the heat to low and let the stew simmer uncovered for 45 minutes, stirring occasionally.
7. Finish with Herbs:
Stir in the chopped basil. Simmer for an additional 5 minutes. Adjust seasoning with salt and pepper if necessary.
8. Serve:
Ladle the stew into bowls and garnish with extra basil if desired. Enjoy warm.
