Savory Turkey Neck and Giblet Stew
Ingredients
- 1 turkey neck
- 1 turkey heart
- 1 turkey gizzard
- 2 large carrots, peeled and diced
- 2 celery stalks, diced
- 1 large onion, diced
- 6 cups water
- 1 cup turkey drippings
Instructions
1. Prepare the Giblets:
Begin by rinsing the turkey neck, heart, and gizzard under cold water. Pat dry with a paper towel and set aside.
2. Sauté the Vegetables:
In a large stockpot, over medium heat, add a splash of turkey drippings (about 2 tablespoons). Add the diced carrots, celery, and onion. Sauté for 5-7 minutes or until the vegetables are tender and the onions are translucent.
3. Brown the Giblets:
Push the sautéed vegetables to one side of the pot. Place the turkey neck, heart, and gizzard in the empty space and allow them to brown on all sides for about 5 minutes.
4. Simmer the Stew:
Pour the remaining turkey drippings into the pot. Add the 6 cups of water to the mixture. Stir gently to combine and ensure all bits are lifted from the bottom of the pot. Bring the liquid to a boil over medium-high heat.
5. Cook the Stew:
Once boiling, reduce the heat to low. Cover the pot and let the stew simmer for 2 hours, stirring occasionally. Check if the turkey pieces are tender by using a fork.
6. Finish and Serve:
When the giblets are tender and the flavors have melded together beautifully, remove the pot from the heat. Carefully remove the turkey neck, heart, and gizzard, shred any meat from the neck, and chop the giblets into bite-sized pieces. Return the meat to the pot, stir to combine, and serve your savory stew hot.
