Seared Lemon Herb Chicken with Garlic Butter Spinach
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon dried oregano
- 2 lemons (zested and juiced)
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 8 ounces fresh spinach leaves
- 1/4 teaspoon crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Chicken:
Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and oregano. Sprinkle lemon zest evenly over the chicken, pressing gently to adhere.
2. Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts. Sear each side for about 6 minutes or until golden brown and the internal temperature reaches 165°F (75°C). Remove chicken from the skillet and set aside to rest.
3. Make the Garlic Butter Spinach:
Reduce the heat to medium-low. In the same skillet, add the butter and allow it to melt. Add minced garlic and sauté for 1 minute until fragrant.
4. Cook the Spinach:
Add the spinach to the skillet. Stir frequently until wilted, about 2-3 minutes. Season with crushed red pepper flakes if desired.
5. Finish with Lemon:
Drizzle lemon juice over the wilted spinach and stir to combine. Return the chicken breasts to the skillet to warm through for about 1 minute.
6. Serve:
Transfer the chicken and spinach to a serving platter. Garnish with fresh parsley. Serve immediately.
