Seared Mushroom and Butternut Squash Ravioli with Truffle Mushroom Sauce
Ingredients
- 1 package Butternut Squash Ravioli (about 9 oz)
- 1 package Frozen Mushroom Ravioli (about 9 oz)
- 2 tablespoons olive oil
- 3 cloves garlic, finely minced
- 1 1/2 cups mixed fresh greens (spinach, arugula, etc.)
- 1/4 cup mushroom truffle sauce
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Grated Parmesan cheese (optional, for garnish)
Instructions
1. Prepare Ingredients:
- Mince the garlic cloves and set them aside.
- Juice and zest the lemon, keeping them in separate small bowls.
- Rinse the fresh greens under cold water, pat dry, and set aside.
2. Cook Ravioli:
- Bring a large pot of salted water to a boil.
- Add both the butternut squash and frozen mushroom ravioli and cook according to package instructions until they are al dente, usually about PT7M (7 minutes).
- Reserve 1/4 cup of the pasta water, then drain the ravioli.
3. Pan Fry Ravioli:
- In a large non-stick skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the cooked ravioli to the skillet in a single layer. Fry each side for about PT4M (4 minutes) until golden brown and slightly crispy.
4. Incorporate Greens and Sauce:
- Add the fresh greens to the skillet and toss gently with the ravioli until the greens begin to wilt, approximately PT2M (2 minutes).
- Reduce the heat to low, mix in the mushroom truffle sauce and lemon juice, stirring to coat evenly. Use reserved pasta water to thin the sauce slightly, if necessary.
5. Finish and Serve:
- Season the dish with salt and pepper to taste.
- Sprinkle lemon zest over the top.
- Transfer the ravioli to serving plates, garnishing with Parmesan cheese if desired.
- Serve immediately for the best flavor and texture.
