Sesame Miso Salmon Stir Fry with Parmesan and Crispy Onions



Ingredients



- 1 pound salmon fillet, cut into 1-inch cubes
- 2 tablespoons sesame oil
- 3 tablespoons white miso paste
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 cup crispy fried onions
- 2 cups mixed vegetables (e.g., bell peppers, snow peas, carrots)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons sesame seeds, for garnish
- 2 green onions, thinly sliced, for garnish

Instructions



1. Prepare the Marinade:
In a medium bowl, whisk together the miso paste, soy sauce, honey, grated ginger, and minced garlic. Add the salmon cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes.

2. Cook the Vegetables:
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the mixed vegetables and stir-fry for 4-5 minutes, or until they are slightly tender but still crisp. Season with a pinch of salt and pepper. Remove the vegetables from the skillet and set aside.

3. Stir Fry the Salmon:
In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the marinated salmon cubes to the pan, reserving any extra marinade. Stir-fry the salmon for 4-6 minutes until they are cooked through and start to caramelize. Remove from heat.

4. Combine and Serve:
Return the vegetables to the skillet with the salmon. Pour any remaining marinade over the mixture. Toss gently to combine and ensure everything is evenly coated. Sprinkle with grated Parmesan cheese and crispy fried onions. Stir fry for an additional 1-2 minutes to meld flavors.

5. Garnish and Serve:
Transfer the stir fry to a serving platter or individual plates. Garnish with sesame seeds and sliced green onions. Serve immediately.
