Shrimp and Chicken Parmesan with Basil Scalloped Potato Bake
Ingredients

Instructions
1. Preparation
- Preheat your oven to 400°F (200°C).
- Lightly grease a large baking dish with olive oil or non-stick spray.
2. Prepare the Scalloped Potato Bake
- Arrange the thinly sliced potatoes evenly in the greased baking dish.
- In a small saucepan, heat the heavy cream over medium heat until warm.
- Stir in 1/2 cup Parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon garlic powder until combined.
- Pour the cream mixture over the potatoes, ensuring they are evenly coated.
- Cover the dish with aluminum foil and bake for 30 minutes.
3. Prepare the Shrimp and Chicken
- Season the shrimp and chicken breasts with olive oil, salt, and black pepper.
- Heat an oven-safe skillet over medium-high heat.
- Sear the chicken breasts for 3 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, quickly sauté the shrimp for 2 minutes until just pink. Remove and set aside.
4. Assemble the Dish
- After the potatoes have baked for 30 minutes, remove the foil.
- Place the seared chicken breasts on top of the partially baked potatoes.
- Add the sautéed shrimp around the chicken.
- Sprinkle the entire dish with mozzarella cheese and the remaining 1/2 cup Parmesan cheese.
- Scatter the chopped basil leaves over the top.
5. Bake to Perfection
- Return the dish to the oven, baking uncovered for an additional 20 minutes or until the cheese is bubbly and golden brown.
- Ensure the chicken is cooked through to an internal temperature of 165°F (74°C).
6. Serve
- Let the dish rest for 5 minutes before serving hot.
