Shrimp and Tofu Stir-Fry with Sweet Potato Starch Noodles
Ingredients
- 8 oz sweet potato starch noodles
- 1 cup uncooked white rice
- 2 tablespoons vegetable oil
- 1/2 pound shrimp, peeled and deveined
- 1 block (14 oz) firm tofu, drained and cubed
- 4 fried eggs, cooked to preference
- 1 cup kimchi, chopped
- 1/2 cup pickled daikon, sliced
- 1 cup carrots, julienned
- 1 cup bean sprouts
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon gochujang (Korean chili paste)
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper, to taste
- 2 green onions, chopped (for garnish)
- Sesame seeds, for garnish
Instructions
1. Prepare the Rice:
Cook 1 cup of rice according to package instructions. Set aside.

2. Cook the Sweet Potato Starch Noodles:
In a large pot, boil water and cook noodles for 5-7 minutes until tender. Drain and rinse with cold water. Set aside.

3. Prepare Tofu and Shrimp:
In a large non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
Add cubed tofu, frying until golden brown on all sides. Remove and set aside.
In the same skillet, add shrimp, cooking until pink and firm, about 3-4 minutes. Remove and set aside.
4. Stir-Fry Vegetables and Assemble Dish:
In the same skillet, add another tablespoon of vegetable oil.
Add garlic and ginger, sautéing until fragrant, about 30 seconds.
Stir in carrots, cooking for 2 minutes.
Add kimchi, pickled daikon, and bean sprouts, stir frying for an additional 3 minutes.
5. Combine and Season:
Return tofu and shrimp to the skillet.
Add cooked sweet potato starch noodles, soy sauce, sesame oil, and gochujang, mixing well to coat all ingredients.
Stir-fry for 2-3 minutes until heated through. Season with salt and pepper to taste.
6. Final Preparation:
Place stir-fry mixture onto serving plates. Top each with a fried egg and cooked rice.
Garnish with chopped green onions and sesame seeds. Serve hot.
