Shrimp & Snow Pea Stir Fry with Garlic-Lime Soy Glaze
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 tbsp soy sauce
- 1 tbsp light brown sugar
- 1 tbsp unseasoned rice vinegar
- 2 tsp fish sauce
- 1 tbsp sriracha
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 2 tbsp canola oil, divided
- 3 cloves garlic, minced
- 2 cups snow peas, trimmed
- 2 heads baby bok choy, chopped
- 2 tbsp unsalted butter
- 1/4 cup cilantro leaves, chopped
- 2 cups cooked white rice (for serving)
- Lime wedges (for serving)
Instructions
1. Prepare the Sauce: In a small bowl, combine the soy sauce, light brown sugar, rice vinegar, fish sauce, and sriracha. Stir until the sugar has dissolved. Set aside.
2. Season the Shrimp: In a medium bowl, toss the shrimp with kosher salt and ground black pepper. Ensure each piece is evenly coated.
3. Cook the Shrimp: Heat 1 tablespoon of canola oil in a large skillet or wok over medium-high heat. Add the shrimp in a single layer and cook for about 1-2 minutes per side, or until they turn pink and opaque. Transfer the shrimp to a plate and set aside.
4. Stir Fry Vegetables: Add the remaining tablespoon of canola oil to the same skillet. Toss in the garlic and sauté for 30 seconds until fragrant. Add the snow peas and baby bok choy, stirring frequently for about 3-4 minutes, until the vegetables are crisp-tender.
5. Combine Ingredients: Return the shrimp to the skillet. Pour in the prepared soy glaze and toss everything together. Allow the mixture to cook for another 1-2 minutes, ensuring the shrimp and vegetables are coated with the sauce.
6. Finish with Butter: Add the unsalted butter to the skillet and stir until melted and the entire dish is glossy.
7. Garnish & Serve: Remove from heat and sprinkle with chopped cilantro. Serve immediately over cooked white rice with lime wedges on the side for an extra zing.
