Silky Cauliflower Cream Cheese Purée with Nutmeg and Green Onion
Ingredients
- 1 medium head cauliflower, cut into florets
- 4 oz cream cheese
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 3 green onions, finely chopped (reserve some for garnish)
Instructions
1. Prepare the Cauliflower
Place cauliflower florets in a large pot and cover with water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce heat to medium and simmer until the cauliflower is very tender, about 12 minutes.

2. Drain the Cauliflower
Drain the cauliflower florets in a colander, ensuring all excess water is removed. Allow them to cool for a few minutes.
3. Blend Ingredients
Transfer the drained cauliflower to a food processor. Add cream cheese, salt, black pepper, and nutmeg. Process until the mixture is silky smooth and creamy. This should take about 2–3 minutes. Scrape down the sides of the processor as needed to ensure even blending.

4. Heat the Purée
Pour the puréed mixture into a large saucepan over low heat. Stir frequently to warm through and to prevent sticking, about 5 minutes.
5. Final Touches
Stir in the majority of the chopped green onions, reserving some for garnishing. Taste, and adjust seasoning if needed.
6. Serve
Transfer the purée to a serving bowl. Garnish with the reserved green onions. Serve hot alongside your favorite main course or enjoy as a standalone comfort dish.
