Silky Deviled Eggs with Smoked Paprika and Fresh Dill



Ingredients


- 6 large eggs
- 2 tablespoons unsalted butter
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon paprika
- 2 tablespoons sour cream
- 2 ounces cream cheese, softened
- 1 tablespoon fresh dill, finely chopped
- 1/2 teaspoon smoked paprika for garnish

Instructions



1. Prepare the Eggs:
Place the 6 eggs in a saucepan and cover with cold water by at least 1 inch. Bring to a rolling boil over medium-high heat.

2. Boil and Chill:
Once boiling, remove the saucepan from heat. Cover and let the eggs sit for 12 minutes. Then, transfer the eggs to a bowl filled with ice water to cool completely.

3. Peel and Halve:
Carefully peel the eggs under running water. Gently slice each egg in half lengthwise. Remove yolks and place them in a medium bowl. Set egg whites aside on a serving platter.

To the egg yolks, add unsalted butter, mayonnaise, Dijon mustard, paprika, sour cream, and cream cheese. Using a fork, mash and mix until the mixture is very smooth and creamy.

Gently fold in the freshly chopped dill into the yolk mixture, ensuring it is evenly distributed. Taste for seasoning and adjust as necessary with salt and pepper.

6. Fill the Egg Whites:
Spoon or pipe the yolk mixture back into the egg white halves, ensuring each half is generously filled.

7. Garnish and Serve:
Sprinkle the filled eggs with smoked paprika for a subtle, smoky flavor. Arrange on a platter and serve immediately or refrigerate until ready to serve.
