Silky Microwave Chocolate Almond Custard
Ingredients
- 1 cup heavy cream
- 1 cup whole milk
- 4 large egg yolks
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 ounces unsweetened chocolate, finely chopped
- 1/2 cup roasted almonds, coarsely chopped
Instructions
1. Prepare Ingredients:
Finely chop 4 ounces of unsweetened chocolate and coarsely chop 1/2 cup of roasted almonds. Set aside.
2. Mix Liquid Base:
In a microwave-safe bowl, combine 1 cup of heavy cream and 1 cup of whole milk.
3. Heat Liquid Mixture:
Microwave the cream and milk mixture on medium power for about 3-4 minutes, or until warm. Be careful not to boil it.
4. Blend Egg Mixture:
In a separate bowl, whisk together 4 large egg yolks, 1/2 cup granulated sugar, and 1 teaspoon vanilla extract until smooth and pale.
5. Temper Egg Mixture:
Slowly pour the warm cream and milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from curdling.
6. Microwave Custard Base:
Transfer the mixture back to the microwave-safe bowl. Microwave on medium power in 1-minute intervals, stirring gently each time, until the mixture thickens enough to coat the back of a spoon. This should take approximately 3-5 minutes. Do not overheat.
7. Incorporate Chocolate:
Add the finely chopped unsweetened chocolate to the hot custard mixture. Stir until the chocolate is completely melted and the mixture is smooth.
8. Finish with Almonds:
Gently fold in the coarsely chopped roasted almonds into the chocolate custard.
9. Chill and Serve:
Divide the custard into individual serving bowls or ramekins. Allow to cool slightly, then refrigerate for at least 2 hours until set. Serve chilled.
