Ingredients


- 2 cups whole milk
- 1 cup sugar
- 1/4 teaspoon salt
- 1 cup heavy cream
- 6 large egg yolks
- 2 tablespoons olive oil

Instructions



1. Prep the Ingredients: Gather all your ingredients and ensure that you have a medium saucepan ready to use on the stove.

2. Create the Custard Base:
- In a medium saucepan, combine 2 cups of whole milk, 1/2 cup of sugar, and 1/4 teaspoon of salt.
- Place the saucepan over medium heat and whisk the mixture until the sugar dissolves completely and the milk begins to steam but does not boil (approximately 8 minutes).

3. Prepare the Egg Mixture:
- While the milk heats, in a separate bowl, whisk together 6 large egg yolks until smooth.
- Gradually add the remaining 1/2 cup of sugar to the yolks, whisking continuously until the mixture is thick and pale.

4. Temper the Eggs:
- Carefully ladle a small amount of the hot milk mixture into the egg yolks, whisking constantly to avoid scrambling the eggs.
- Slowly add the remaining milk mixture to the yolks, continuing to whisk to combine.

5. Cook the Custard:
- Return the entire mixture to the saucepan and place over medium-low heat.
- Stir continuously with a wooden spoon, ensuring the mixture thickens enough to coat the back of the spoon, about 10-12 minutes. Do not let it come to a boil.

6. Add the Cream and Olive Oil:
- Remove the saucepan from heat and stir in 1 cup of heavy cream and 2 tablespoons of olive oil until fully incorporated.

7. Chill the Custard:
- Pour the custard into a clean bowl, cover it with plastic wrap touching the surface to prevent a skin from forming, and refrigerate until fully cooled, at least 2 hours or overnight.

8. Serve and Enjoy:
