Silky Stove-Top Potato Purée with Creamy Egg Yolk Butter
Ingredients
- 2 lbs potatoes, peeled and diced
- 3 egg yolks
- 1/2 cup unsalted butter, softened
- 1/2 cup heavy cream
- 1/4 cup sour cream
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
1. Prepare the Potatoes
- Place the peeled and diced potatoes in a large pot and cover with cold water. Add a generous pinch of salt to the water.
- Bring the pot to a boil over medium-high heat on the stove. Once boiling, reduce the heat to a simmer and cook until the potatoes are fork-tender, approximately 20 minutes.
2. Create the Egg Yolk Butter
- While the potatoes are cooking, prepare the egg yolk butter. In a small bowl, combine the egg yolks and softened butter. Stir gently until well combined and smooth.
3. Drain and Mash
- Drain the cooked potatoes and return them to the pot. Allow them to sit for a minute on the stove over low heat to remove any excess moisture.
- Use a potato masher or ricer to mash the potatoes until smooth. If you prefer an ultra-smooth texture, pass the potatoes through a fine sieve.
4. Incorporate Cream and Sour Cream
- Gradually add the heavy cream to the mashed potatoes, stirring constantly to combine. Then, fold in the sour cream until everything is evenly mixed and silky.
5. Finish with Egg Yolk Butter
- Reduce the stove heat to low and gently incorporate the egg yolk butter mixture into the potatoes, stirring until the butter is fully melted and the purée is rich and smooth.
6. Season and Serve
- Taste and season the potato purée with salt and freshly ground black pepper as desired. Serve immediately as a sumptuous side dish.
