Silky Stove-Top Potato Purée
Ingredients
- 2 pounds potatoes, peeled and quartered
- 1/2 cup unsalted butter, cut into cubes
- 1/2 cup heavy cream
- 1 tablespoon salt, divided
- Ice-cold water (enough to cover potatoes)
Instructions
1. Prepare Potatoes: Place the peeled and quartered potatoes into a large pot. Cover with ice-cold water and add 2 teaspoons of salt.
2. Boil Potatoes: Set the pot on the stove over medium-high heat. Bring to a rolling boil and let simmer until the potatoes are fork-tender, approximately Pt15M (15 minutes).
3. Drain and Dry: Drain the water from the pot and return potatoes to the stove. Heat over low temperature for 2-3 minutes to dry out excess moisture.
4. Mash Potatoes: Using a potato masher or a ricer, mash the potatoes until smooth.
5. Incorporate Butter: Gradually add the cubed butter, mashing continuously until fully incorporated for a silky consistency.
6. Add Cream: Heat the heavy cream gently in a separate saucepan over low heat until warmed through. Slowly stir the warm cream into the mashed potatoes.
7. Season to Taste: Add the remaining 1 teaspoon of salt and adjust to taste as needed. Stir until everything is well-combined and serve immediately.
