- 2 pounds Yukon Gold potatoes

Instructions
1. Peel and Roughly Chop the Potatoes: Begin by peeling 2 pounds of Yukon Gold potatoes. Cut them into 1-inch cubes to ensure even cooking.
2. Boil the Potatoes: Place the chopped potatoes in a large pot. Add enough cold water to cover the potatoes by an inch. Add 1/2 teaspoon of salt and bring to a boil over medium-high heat.
3. Simmer the Potatoes: Once boiling, reduce the heat to medium and let the potatoes simmer. Cook for about 15 minutes or until a fork easily pierces through them.
4. Heat the Cream Mixture: While the potatoes are cooking, place a small saucepan on low heat. Add 1 cup of heavy cream and 4 tablespoons of butter. Stir occasionally until the butter is melted and the mixture is warm but not boiling. This should take about 5 minutes.
5. Drain the Potatoes: Once the potatoes are tender, drain them using a colander, shaking off excess water. Return the potatoes to the warm pot.
6. Mash the Potatoes: Use a potato masher or a ricer for smooth potatoes. Add the warm cream and butter mixture gradually, mashing as you go until the potatoes are silky smooth.
7. Season the Mashed Potatoes: Sprinkle 1/2 teaspoon of black pepper and the remaining 1/2 teaspoon of salt over the potatoes. Stir until the seasoning is fully incorporated.
