Ingredients
- 2 tablespoons canola or vegetable oil
- 1 pound ground beef

- 3 tablespoons sweet chili sauce
- 1 tablespoon toasted sesame oil
- 2 teaspoons cornstarch
- 1/2 cup cottage cheese
- 1 cup shelled edamame, thawed
- 1 medium cucumber, thinly sliced
- 1/2 cup pickled red onions
- 2 green onions, chopped
- 2 tablespoons toasted sesame seeds
Instructions
1. Prepare the Sauce
In a small bowl, combine the soy sauce, orange juice, brown sugar, sweet chili sauce, toasted sesame oil, and cornstarch. Whisk together until the cornstarch is fully dissolved and the mixture is smooth. Set aside.
2. Cook the Beef
Heat 1 tablespoon of canola or vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook for about 5-7 minutes, breaking it apart with a spoon, until it is browned and cooked through.
3. Add Aromatics
Reduce heat to medium. Add the minced garlic to the beef and stir for about 1 minute until fragrant.
4. Incorporate the Sauce

Divide the cottage cheese equally among four serving bowls. Layer with the cooked beef mixture, followed by the edamame, cucumber slices, and pickled red onions.
7. Garnish and Serve
