Sizzling Broiled Taco-Stuffed Avocado Boats
Ingredients
- 1 pound ground sirloin
- 1 can (14.5 ounces) diced fire-roasted tomatoes
- 1/4 cup water
- 1 can (4 ounces) diced green chiles
- 1 packet (1 ounce) taco seasoning
- 2 cups frozen cooked rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 2 cups shredded lettuce
- 1/2 cup diced onions
- 2 medium tomatoes, diced
- 1 cup sour cream
- 1 cup salsa
- 4 avocados, halved and pitted
- Sliced avocado (as garnish, optional)
Instructions
1. Preheat Broiler: Set your oven to broil at high heat. Allow a few minutes for it to reach the desired temperature.
2. Prepare the Filling:
- In a large skillet over medium heat, add the ground sirloin. Cook the meat, stirring occasionally, for 5-7 minutes until browned.
- Drain excess fat if necessary. Add the diced fire-roasted tomatoes, water, diced green chiles, and taco seasoning. Stir well.
- Simmer the mixture for 8-10 minutes until the flavors meld, and most of the liquid reduces.
- Add the frozen cooked rice and black beans. Mix thoroughly and cook for an additional 5 minutes until heated through.
- Season with salt and black pepper. Turn off the heat and set aside.
3. Prepare Avocado Boats:
- Scoop out a small portion of the avocado flesh to create a bigger cavity. Save the scooped avocado for garnish, if desired.
- Spoon the taco mixture generously into each avocado half. Top with shredded cheddar cheese.
4. Broil: Place the stuffed avocados on a baking sheet. Broil for 3-4 minutes until the cheese melts and slightly browns.
5. Serve:
- Arrange the avocado boats on a serving platter. Garnish with shredded lettuce, diced onions, diced tomatoes, sour cream, salsa, and additional sliced avocado if using.
- Serve immediately with any extra fillings on the side.
