Sizzling Chipotle Shrimp Tacos with Pineapple Mango Salsa
Ingredients
Main Components:
- 1 lb shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup rice, cooked
- 2 cups shredded cabbage
- 1 can black beans, drained and rinsed
Sauce & Marinade:
- 1 cup sour cream
- 1 tablespoon chipotle chile in adobo, finely chopped
- 1 lime, juiced
- 1 teaspoon salt
Salsa & Cheese:
- 1 cup pineapple salsa
- 1 cup mango salsa
- 1/2 cup Cotija cheese, crumbled
- 1/2 cup queso fresco cheese, crumbled
Instructions
1. Marinate Shrimp:
- In a mixing bowl, combine the shrimp, Cajun seasoning, and chipotle chile in adobo. Mix until well-coated. Set aside to marinate for 10 minutes.
2. Prepare Sauce:
- In a small bowl, whisk together the sour cream, lime juice, and salt. Set aside to allow flavors to meld.
3. Cook Rice:
- Cook rice according to package instructions, then set aside.
4. Saute Shrimp:
- Heat olive oil in a large skillet over medium-high heat. Add the marinated shrimp and sauté for 3-4 minutes on each side or until shrimp are opaque and fully cooked.
5. Warm Beans & Rice:
- In a separate pan, warm the black beans and cooked rice over low heat, stirring occasionally.
6. Assemble Tacos:
- Lay tortillas on a flat surface and start with a layer of shredded cabbage. Top with sautéed shrimp, followed by a spoonful each of pineapple salsa and mango salsa.
7. Add Cheese & Sauce:
- Sprinkle Cotija cheese and queso fresco over the top, then drizzle with the prepared sour cream sauce.
8. Serve:
- Serve immediately with lime wedges on the side for extra zing.
