Sizzling Shrimp & Cheese Quesadillas with Cilantro-Lime Butter
Ingredients
- 1 pound shrimp, peeled and deveined
- 4 tablespoons unsalted butter, divided
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons lime juice
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 8 flour tortillas
Instructions
1. Prepare the Shrimp:
- In a medium bowl, combine the shrimp, 1 tablespoon of melted butter, chili powder, salt, and black pepper. Mix until shrimp are well-coated. Set aside.
2. Sauté the Vegetables:
- Heat 1 tablespoon of butter in a large skillet over medium heat.
- Add the sliced onion and red bell pepper, sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional 1 minute. Transfer to a plate.
3. Cook the Shrimp:
- In the same skillet, add the shrimp and cook for about 3 minutes per side, or until they turn pink and opaque. Remove from heat and squeeze 1 tablespoon of lime juice over the shrimp. Add cooked vegetables back to the skillet, toss to combine, and remove from heat.
4. Prepare the Cilantro-Lime Butter:
- In a small bowl, mix the remaining 2 tablespoons of butter with the chopped cilantro and 1 tablespoon of lime juice. Stir until well-combined.
5. Assemble the Quesadillas:
- Wipe out the skillet and set over medium heat.
- Place one tortilla in the skillet, sprinkle with 1/4 cup of cheese, add a quarter of the shrimp and vegetable mixture, and top with another 1/4 cup of cheese.
- Place a second tortilla on top, pressing down gently.
- Cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese has melted. Repeat for the remaining tortillas.
6. Serve:
- Transfer the quesadillas to a cutting board and slice into wedges.
- Brush with cilantro-lime butter before serving.
