Sizzling Southwestern Rotini Pasta Delight
Ingredients
- 12 ounces Rotini pasta
- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1 cup cherry tomatoes, halved
- 1 cup grape tomatoes, halved
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) canned corn, drained
- 1/2 red onion, finely diced
- 1 jalapeño, seeds removed, finely diced
- 4 strips bacon, cooked and crumbled
- 1 cup salsa verde
- 2 tablespoons fresh lime juice
Instructions
1. Cook the Pasta:
- Boil a large pot of salted water over high heat.
- Add the Rotini pasta and cook according to package instructions until al dente, approximately PT10M (10 minutes).
- Drain and set aside.
2. Brown the Beef:
- In a large skillet over medium heat, add ground beef.
- Cook, breaking it up with a spoon, until browned, approximately PT7M (7 minutes).
- Drain excess fat and set aside.
3. Sauté Vegetables:
- In the same skillet, add diced red onion and jalapeño.
- Sauté until soft and fragrant, about PT3M (3 minutes).
4. Combine Ingredients:
- Add the cooked pasta, ground beef, black beans, canned corn, cherry and grape tomatoes to the skillet.
- Stir in salsa verde and lime juice, incorporating all ingredients thoroughly.
5. Heat Through:
- Increase heat to medium-high, and cook until everything is heated through, approximately PT5M (5 minutes).
6. Add Cheese and Bacon:
- Remove from heat and sprinkle with shredded cheddar cheese and crumbled bacon.
- Allow cheese to melt slightly.
7. Serve:
- Serve immediately, garnished with additional lime wedges, if desired.
